Ingredients:
1 Dakota Pure Bison roast
1 tsp. olive oil
salt
ground black pepper
5 cloves garlic, minced
1 large onion, diced
1/4 c. balsamic vinegar
3 tbsp. brown sugar
3 carrots, peeled and chopped
3 potatoes, peeled and cut
5 sprigs of fresh thyme
1 bay leaf
2 c. beef broth
1 c. dry red wine
2 tbsp. parsley
Directions:
Step 1:
Season bison roast generously with salt and pepper. Place roast in slow cooker.
Step 2:
Warm a pan to medium heat and add 1 teaspoon oil. Sauté garlic and onions for 2 minutes. (Can brown roast on each side if you have time, does add flavor) Add balsamic vinegar and simmer on low until slightly reduced, about 5 minutes. Add brown sugar and stir until dissolved. Pour mixture over meat in slow cooker.
Step 3:
Add carrots, potatoes, thyme, bay leaf, beef broth and red wine. Cook on low for 6 to 8 hours.
Step 4:
Remove bay leaf and thyme branches. Serve immediately and enjoy your delicious meal!
